The cherry fruit is a fleshy fruit with one seed of spherical form, of colour usually intense red until almost black. The cherry tree is one of the most common fruit trees in our orchards. In the hilly region India, cherries are harvested from late May to mid-August. It is consumed fresh or in cakes, mousses, jams and fruit stews. The larger cherries are usually the ones with better taste and texture. It has a low-fat content and no cholesterol. Its energetic value comes mainly from the carbohydrates. Like most temperate-latitude trees, cherry trees require a certain number of chilling hours each year to break dormancy and bloom and produce fruit.
